Quick & Easy Sweet Potato Chicken Bagel

This is the ultimate practical lunch hack: a gourmet sandwich built entirely for your well-being. I created this for those days when I need serious fuel but have zero time. The combination of sweet potato, smoky pepper, and the zesty tahini sauce is simply addictive! Itโ€™s packed with complete protein from the chicken, tons of Vitamin A from the sweet potato, and the gut-friendly fiber you need for sustained energy.


Ingredients

1 sweet potato bagel

4 slices chicken cold cuts (clean label)

4 cucumber ribbons

ยฝ roasted red bell pepper

2 Tbsp tahini sauce

A handful of chives, finely chopped

Instructions

  1. Prepare the Tahini Sauce: In a bowl, place the 2 Tbsp of tahini sauce. Gradually add small amounts of cold water and lemon juice while mixing with a hand mixer until it emulsifies to a mayonnaise-like consistency.
  2. Add Herbs: Finely chop the chives (or cilantro/basil). Add them to the tahini sauce and blend with the hand mixer to combine.
  3. Prep Veggies: Wash the cucumber and shave it into 4 long, thin ribbons using a vegetable peeler.
  4. Assemble the Bagel: Spread a generous layer of tahini sauce on the inside of both bagel halves. On the bottom half, arrange the cucumber ribbons, followed by the roasted red bell pepper, and finally the chicken cold cut slices. Place the top half over the filling. Enjoy!

Chef's Notes

Sauce Consistency: If it's too thick, add a drop more water.

Vegetable Swap: If you don't have roasted red pepper, sun-dried tomatoes (packed in oil) or a few slices of fresh avocado make excellent substitutions!

Storage: This sandwich is best enjoyed immediately. If prepping ahead, store the tahini sauce in an airtight container in the fridge for up to 3 days, and store the individual components separately. Assemble just before eating.
