Indian Summer Salad: Curried Prawns & Crispy Chickpeas

Forget everything you think you know about salads. This isn't your average bowl; it's a vibrant, nutrient-dense meal inspired by the warming spices of Indiaโ€”my personal favorite cuisine!. It delivers on every front: lean protein from the prawns and egg, tons of Vitamin C from the greens and pepper, and serious gut-friendly fiber from the crispy chickpeas.


Ingredients

3-4 red romaine lettuce leaves

2 endive leaves

100g prawns (raw, peeled)

1 organic egg

4 broccolini spears

ยผ red pepper

ยฝ tsp curry powder

1 Tbsp olive oil, fresh coriander leaves

salt and pepper to taste

a handful of crispy chickpeas (ADD LINK)

ยฝ lemon

Instructions

  1. Prep Broccolini & Prawns: In a medium pan, heat ยฝ Tbsp of olive oil over medium heat. Add the broccolini spears, salt, and pepper, and sautรฉ for 3 minutes until bright green and slightly tender. Remove the broccolini and set aside. Add ยฝ Tbsp of olive oil to the pan, toss the prawns with the curry powder, salt, and pepper, and sautรฉ for 3โ€“4 minutes until pink and thoroughly cooked. Set aside.

  3. Prep Veggies & Assemble: While the egg cooks, slice the red pepper. Clean and arrange the red romaine and endive leaves in your bowl. Artistically place the warm curried prawns, sautรฉed broccolini, and red pepper.
  4. Finish & Serve: Top the salad with the warm, poached egg. Sprinkle with crispy chickpeas and fresh coriander leaves. Finish with a drizzle of olive oil and a bright squeeze of ยฝ lemon, then serve immediately.

Chefโ€™s Notes

Tip Poaching Perfection: Adding a splash of vinegar to your poaching water helps the egg whites set faster, ensuring a perfectly contained, rich yolk!

Storage: This salad should be consumed immediately after assembly to maintain the crispness of the greens and the warmth of the egg and prawns.
