About Jimena

I started the Lemon Way as a place to share the things I learned along my journey to better health. A guide where you can find everything you need to live better without having to compromise, exploring natural and holistic alternatives to your everyday needs.

It all started about seven years ago, when I felt an urge to travel the world. I saved like crazy, quit my job and after a year discovering exotic places, new foods and unique cultures, I decided it was time - time to truly pursue my dream: cooking. I came home and enrolled in Le Cordon Bleu. One month in, everything changed: I was diagnosed with an autoimmune disorder called Hashimoto thyroiditis. And so this wellbeing journey began…

I was thrilled to finally follow my true passion of working as a pastry chef. I was lucky enough to train at some of the most prestigious hotels in London,The Ritz and the Claridge’s, and to work in my favourite bakery, Ottolenghi. Little did I know the toll that fulfilling my dream would take on my health.

I was sleep deprived, I had no energy, I lived in constant exhaustion mode, had a permanently bloated stomach as well as many digestive issues, and was starting to develop arthritis. Above all, my thyroid levels were completely off the charts. This led me to switch the high-paced kitchen for a food startup, where I could apply both my kitchen and marketing knowledge. Yet again I found myself in a stressful environment and it was putting a huge toll on my health. Unsurprisingly, I was further diagnosed with leaky gut and gluten intolerance.

I decided to take things into my own hands and went on a healing break. A break that fixed a lifetime of fragile health (recurrent tonsillitis, digestive issues, infectious mononucleosis) in just six months. Six very intense months of holistic doctor and nutritionist visits, following a strict anti inflammatory diet, reading all the immune books I could get my hands on, and researching natural alternatives to boost my health. It was extremely frustrating and incredibly difficult to find resources and answers to follow a more natural lifestyle. On top of the huge cost and time effort that accompanied this health break. This is when the idea of The Lemon Way was born - as the guide I wish I had had on my journey to better health.

Along the journey of creating The Lemon Way I was positively surprised with the news of a baby. I started researching natural and sustainable alternatives to pregnancy and motherhood, and realized these very important moments in life also lack the available resources to lead a mindful and holistic lifestyle. I have dedicated a section to all the natural alternatives I am discovering as I go, because great health begins in the womb.
