For all the traditional Bounty lovers, this one is for you. As a child, I loved the classic pairing of rich coconut and deep chocolate, so I decided to replicate a cleaner, functional version. These coconut balls are a family-favorite snack that can be prepared ahead of time to rescue you from afternoon slumps. Packed with medium-chain triglycerides (MCTs) from coconut butter and raw coconut, this snack will leave you entirely sated and metabolically energized without the dramatic insulin spike.
Ingredients
50g coconut butter
60g shredded coconut (organic)
2 Tbsp agave syrup
100g raw chocolate, melted (optional for coating)
Instructions
- Melt the base: Melt the coconut butter over a bain-marie. Give it a good stir before measuring, as the natural oils tend to separate in the jar. Transfer to a mixing bowl and let it cool slightly to room temperature.
- Combine & Chill: Add the shredded coconut and agave syrup to the bowl. Stir everything together until a uniform dough forms. Place in the fridge for 10 minutes to firm up to make shaping easy.
- Shape: Roll them into 8 even balls with your hands and place them on a tray lined with baking paper. Transfer back to the fridge to firm up completely for 20 minutes.
- Decorate: Melt your raw chocolate over a bain-marie and transfer it to a small bowl. Use a fork to dip each chilled coconut ball into the chocolate, roll it around to coat, and tap off the excess. Roll in shredded coconut if desired, then place them back on the baking paper tray. Enjoy immediately or store in the fridge.

Coconut Butter vs. Coconut Oil: Coconut oil is simply the extracted fat from the coconut. Coconut butter, however, is a whole foodβit is the entire coconut flesh purΓ©ed into a creamy paste, retaining all the dietary fiber, magnesium, and amino acids alongside the healthy fats.
Storage: Keep in an airtight container for up to 1 week in the fridge, or up to 3 months in the freezer.
Heat Note: Both coconut butter and raw chocolate liquefy completely above 24Β°Cβ30Β°C. Enjoy these beauties straight from the fridge, as they are not built to travel in hot weather.
