One of my fondest childhood memories is drinking cold gazpacho straight from the fridge at all hours—yes, even for breakfast. This authentic, bread-free version is a nutrient-loaded blend that hydrates your skin, kicks bloat to the curb, and tastes like summer in a glass.


Ingredients

1.2kg very ripe plum tomatoes

½ large sweet onion

200g (1 small) cucumber

1 large red bell pepper

4 Tbsp extra virgin olive oil

Salt to taste

Instructions

  1. Prep the veggies: Wash the tomatoes and red pepper. Remove the tomato stems, and core and seed the pepper. Peel the onion and cucumber. Cut everything into large chunks and place directly into a high-speed blender.
  2. Blend to liquid: Blend on high speed for 2 minutes until completely liquefied and smooth.
  3. Emulsify & season: Add the extra virgin olive oil and salt. Blend on medium speed for another 3 minutes to emulsify the oil.
  4. Chill & serve: Pour into a glass pitcher or jar and chill in the fridge for at least 1 hour until cold. Serve in glasses or bowls. Top with a dash of vinegar and finely diced fresh veggies and hard-boiled egg if desired!

Chef’s Notes & Tips

Taste & Texture: Traditional gazpacho is often strained through a chinois (fine-mesh sieve) to discard the seeds and skin. I skip this step because keeping the whole pulp preserves essential fiber and gut-friendly nutrients! For acidity, some Spaniards blend vinegar directly in, but I prefer adding a dash of vinegar before serving.

Storage: Store in a glass jar or pitcher in the fridge for up to 4 days. Always shake or stir well before serving.
