Crispy Chickpea Anti-inflammatory Crackers

These earthy crackers are my favorite way to sneak more protein, turmeric and cumin into my day. A hearty, satisfying crunch that pairs perfectly with a simple bowl of guacamole or hummus. They are simple snack to keep you feeling balanced.


Ingredients

110g Chickpea flour

1 Tbsp sesame seeds

1 Tbsp nutritional yeast

½ tsp ground turmeric

½ tsp ground cumin

½ tsp curry powder

1 Tbsp olive oil

4 Tbsp water

Instructions

  1. Prep: Preheat the oven at 175ºC and line a tray with baking paper.
  2. Mix the Dry: In a large bowl, whisk together the chickpea flour, sesame seeds, nutritional yeast, turmeric, cumin, and curry powder. Create a well in the center—the professional way to ensure a smooth dough.
  3. Combine: Pour the olive oil and 4 tbsp of water into the well. Using a spatula, gradually draw the flour into the center until a firm dough ball forms. Chef’s Note: If it feels a bit stubborn, use your hands to knead it for 30 seconds until smooth.
  4. Roll out: Place the dough between two sheets of baking paper. Roll it out as thin as possible (aim for 2-3mm). Remember: thickness is the enemy of the snap!
  5. Score: Peel off the top paper. Use a wet knife to score the dough into your 20–25 rectangles. This ensures they snap perfectly along the lines once baked.
  6. The Bake: Bake at 175ºC for 15-20 minutes. Rotate the tray after 10 minutes.
  7. The Tell: They are done when they are a deep golden brown and feel firm to the touch. Transfer to a cooling rack immediately; they’ll reach peak "snap" as they cool.

Chef’s Notes

Tip: Because chickpea flour is naturally quite dense, the "wet knife" trick for scoring is non-negotiable. It prevents the dough from dragging and keeps your edges clean.

Storage: Store in an airtight glass container or tin for up to 5 days.
