Creamy 5 Minute Guacamole

Smash, mix, eat. The recipe that needs no recipe. This filling, nutrient rich, gut soothing guacamole is so easy to make that you will end up making it with your eyes closed. The perfect topping for your salads, your morning breakfast boost or your go to snack for a friends night in. Toss in some chili and turmeric for an extra kick and be warned, you might get addicted.

INGREDIENTS

1 ripe avocado (at room temperature)

2 tsp lemon juice

1 Tbsp olive oil

1 fresh red chilli

A handful of fresh coriander

A pinch of salt

1 tsp turmeric (optional)

½ tsp ground pepper

1 tsp cumin (optional)

 

INSTRUCTIONS

1. Slice the avocado lengthways, remove and reserve the stone. Score each avocado half vertically and horizontally and scoop out the flesh with a spoon.

2. Smash the avocado flesh with a fork on a plate to a creamy puree consistency. Add the lemon juice and olive oil and mix with a fork until fully incorporated.

3. Season to taste with salt and spices. Stir in the chilli and coriander finely chopped and mix to combine. Serve on quinoa bread toast and enjoy.

TIP

Ripe avocados: finding ripe avocados can be quite a quest. Gently press the tip and attempt to remove. A ripe avocado will loose its tip easily. Ripen at home: wrap in newspaper and store in a cupboard or drawer away from light. It will ripen naturally in approximately two days.

Storage: store any leftover guacamole with the stone in an airtight container and consume within a day.
